Pumpkin Soup

1 tsp. butter
1 cup diced onion
2 celery stalks (diced)
1 tsp. flour
3 cups vegetable or chicken broth
1 15-oz. can of pumpkin
1 T. honey
1/2 tsp. salt
pepper
1/4 tsp. nutmeg
1 tsp. tarragon chopped
1 can evaporated milk (I use non fat)
Melt butter. Add onions and cook until soft. Add celery.
Next, add flour and thicken.
Then add broth and stir until smooth. Add
pumpkin, honey, spices
Finally add evaporated milk and cook for 15 minutes on low.
